Catching Up December 7, 2009

Brr, I know I probably sound like a broken record – but it is COLD outside!  Right now the windchill is -7!!  Yikes!

Chris and I are curled up under the covers watching Pawn Stars (guilty pleasure) and I’m finally catching up on pictures of all my cooking this weekend.

Going back to Saturday – I made vegetarian “refried” beans in the crockpot.

This is an onion cut in half, a 14 ounce bag of pinto beans, green chilies, spices and lots of water – here it is pre-cooking:

These beans turned out really good, and I definitely think they’ll replace canned vegetarian beans in our future. I made enough to make a small tray of bean and cheese enchiladas + froze enough beans to make another batch in a week or so!

To go with the enchiladas, I made a big pot of chicken tortilla soup that cooked all day Sunday.  This turned out really good and will feed us 3 dinners from just one pot!  I used a ton of ingredients – chicken stock, water, chicken, corn, onion/chilies, spices, and on and on.  A super easy recipe though – you just throw it all in the crock pot and wait!

Dinner last night was 2 bean and cheese enchiladas and a cup of chicken tortilla soup.  I filled the bottom of my bowl with avocado and tomato and topped the soup with a little shredded cheese.

Over the weekend, my sweet tooth was kicking in so I had to bake a few sweet things.

Saturday night I made pumpkin cream cheese bread from Kraft Food & Family magazine.

Sunday I made a batch of Ghirardelli brownies with dark chocolate Reese’s mixed in.  Yum!!

Today breakfast was a honey wheat bagel + strawberry cream cheese and a glass of Naked OJ.

I had an unpictured triple grande non-fat caramel macchiatto when I got to work since I was FROZEN from walking from the train to the building.

Lunch was a leftover bean and cheese enchilada + hot sauce and cherry tomatoes.

I had a slice of pumpkin cream cheese bread for dessert.

My afternoon snack consisted of some unpictured pistachios and a grape fruit leather.

Dinner tonight was a DIY take-out experiment. Sesame chicken!  Chris and I have 2 places we LOVE that make amazing sesame chicken and I attempted to make a healthier/cheaper version.  This turned out pretty well, but just not eat it again good.  I think it’s hard to recreate things that are super ingrained on your taste buds.

I had a banana on the side and after dinner had an unpictured brownie.

It’s only 9pm, but I am sleepy!  I’m going to head to bed now, so I can get up to run tomorrow am…one day closer to the weekend folks!

    Those veggie “refried” beans look really good Sarah!

      They turned out really good! I was worried they wouldn’t be quite “right” but I think we both prefer them to the canned beans and we know exactly (and can count on both hands) what ingredients are in them! Let me know if you’d like me to post the recipe!
