A New Friday Tradition September 10, 2010

I have a cranberry orange scone and mega-iced coffee in hand…counting down the hours til the weekend! I have a lot of busy work to get done today and am hoping to head out around 4:30…cannot wait!  This weekend will be busy:

  • Hit up Costco for a mega-grocery stock up
  • Go running for the first time in over a week (I’m not digging the pre-work darkness + there’s a massive, horrible fire raging up the mountain from us and air quality is really poor, please keep the people affected by the Four Mile Canyon fire in your thoughts, the last count I saw was 169+ homes lost to the fire).
  • Try to keep up the daily yoga action
  • Start working on getting the apartment as clean/organized as possible before busy season #3 for the year hits in October
  • And finally…search all the TJ Maxx’s I can find.  I fell in love with a Calvin Klein red wool/cashmere pea coat earlier this week and the TJ Maxx downtown didn’t’ have my size.  Boo.  I must have this coat.  I looked online and found it for $130…folks, it was only $79 at TJ’s!  Don’t worry, it WILL be mine 😉

Grocery shopping will be much easier this mega-shop as we just purchased a deep freeze (not a big one, just a little guy) last weekend.  It was $170 at Home Depot – but we had 2 gift cards + a safety incentive from work, so we walked away with a really nice freezer for about $65!  Love that 🙂  We’re also using the “nanny plan” for dinners.  We stumbled across the Food Nanny on the BYU TV channel and while the nanny herself is a little over the top – the plan is a really, really good idea.  Essentially, you plan out your meals for two weeks using a theme system.  Our theme system is going to be as follows:

Sunday – Comfort Food (i.e. meatloaf, biscuits and gravy, beef stroganoff, pot pies, etc)

Monday – Ethnic (i.e. enchiladas, egg rolls, curry, etc)

Tuesday – Italian (self-explanatory, lol)

Wednesday – Pizza (not just run of the mill pizzas, we’re categorizing pizza as anything on a flat piece of dough and baked, hehe)

Thursday – Leftovers

Friday – Eat Out

Saturday – Easy/Leftovers/Do-Your-Own-Thing (i.e. eat whatever’s in the house to get a clean jump on the next week)

I really like this as it takes the guess work out of what’s for dinner for the next two weeks, lays out a clear plan of what you need a the grocery store and also with the theme nights – helps provide inspiration for different meals, so you don’t eat the same stuff every week.  I’m going to take all my 2 week menus after we use them and file them in a three ring binder – then, we can recycle old menus over time.  I also really, really like that there’s only full-fledged cooking 4 nights a week, with 2 of those nights being pretty easy (pizza/Italian) to prepare.  Week 1 went pretty good, we did break down and pick up taco bell for dinner one night – but we’re going to blame the crazy neighbors on that (in other news, crazy neighbors seemed to have realized there’s a bar in the complex and went there last night instead of partying on their porch!!)

Since it’s Friday, and that’s something to be happy about in and of itself, let’s start a new happy Friday tradition! A local radio station does something once a week or so called “Tell Me Something Good” and I’m going to steal their idea.  So, tell me one thing you plan to do this weekend and one good thing – it could be something good you heard on the news, a great piece in your outfit, or just that it’s a beautiful day and you’re happy to be living it!  I feel like there’s so much negativity going on right now and even just a little bit of brightness is going to start our Friday (and thus our weekend!!) off right.

Plans for the weekend – True Blood season finale…need I say more??

Something good – Today I’m wearing my favorite gold sandals and I’ve accomplished everything on my to-do list for the week!

 

Ramen Noodles April 22, 2010

That’s right.  I said it.  On a food blog!  I had Ramen noodles for dinner.  You may now revoke my food blogger license 😉

Before we get to that…let’s rewind back, way back to waking up at 4:45 this morning.  I actually woke up at 4:30 and noticed the alarm clock was flashing “12:00” thank goodness for cell phone back up alarms!  We got up at 4:45 (Chris leaves for work at 5…poor guy) and I went out for a 4 mile run.  After my run I was looking forward to a Luna recovery shake but I must have tossed them all…I couldn’t remember if they had expired/were about to expire.  Instead, I had a cup of Nesquick.

I made it out the door by 6:30 to catch my train and grabbed a Caramel Macchiato and scone when I got to the office:

I also heated up a cup of overnight oats I brought from home.  This is a packet of instant oats (I know, I’m breaking all the blog rules today) with mini chocolate chips, almond butter, milk, craisins and raisins mixed in.  This was a REALLY good bowl of oats.  Mmm!

Work was uneventful today, long…but uneventful.  I went out for a quick walk at lunch time and couldn’t resist picking up a sandwich at Heidi’s.  I got a BLT with Avocado on fresh baked sour dough.  Sooooo good.  Really, this may be my new favorite Heidi’s sandwich.

On the side I had some chips from home and a simply fruit roll up  – sweetened with fruit juice instead of sugar 🙂

And then…back to work!  I think working in an office and being there 9-10 hours a day makes me one of the most boring bloggers ever.  What can you do, gotta make the $$ 😉 I finally made it out of the office a little before 6 and walked through the rain to the train and made it home around 7.  Chris had leftover skillet lasagna for dinner and I just couldn’t do it…we’ve been eating leftovers all week and I’m just over them.  So, I went crazy and made a packet of Ramen for dinner.  Oh yes, I’m that bad…

On the side I had 2 homemade rolls topped with butter and on one roll I had grape jelly and the other role had Krofter’s Super Fruit.

There may or may not have been some cake and ice cream action post dinner.  May or may not 😉

Oh!  I finished One for the Money on the light rail tonight, can’t wait to read the second book!  I really enjoyed the story and think this will be a fun/slightly trashy series to get caught up in.  Perfect summer reading.

Sleepy Birthday Princess April 10, 2010

Yes, that’s right.  I woke up this morning at 7:58 am and insisted Chris wake up as well…and then insisted he call me “Birthday Princess” all day long.  Needless to say, it didn’t catch on 😉  A girl can try 🙂

Today was a great birthday and I’m quite ready for bed now…debating 5-8 miles for tomorrow’s long run.  It’s a cut back week and I’ll wing the distance depending on the weather when I wake up 🙂  Today has been full of gluttony and I’m excited to get out there and sweat it out.  I didn’t get any pics today but we started the morning with Krispy Kreme & Starbucks and ended the day with Qdoba…mmm birthday food!  In the middle of the day we took a trip to Bed, Bath & Beyond and scored a food scale, Cuisinart Griddler and knife block all for 20% off!  Love that.  The rest of the day was spent being lazy, napping and relishing a beautiful Saturday.

Last night we went and saw Date Night.  If you haven’t seen this movie – do so, now.  It was HILARIOUS.  Seriously…all last night and today Chris and I have been throwing out random movie quotes.  Everything from “sexy robots” to “your girlfriend is so hot it’s like looking through a jet engine.”  Definitely one of the best comedies I’ve seen in a while and also a really sweet story 🙂

But now, it’s time to get cleaned up and head to bed, us old women like to go to bed early so we can rise with the birds 😉  Or something.  I know 26 isn’t old in the grand scheme of things, but something about being past my mid-20s makes me feel just a bit old…and then I remember that Chris will be the big 2-8 in a couple months and I feel like a spring chicken again, hehe.

Weird…I published this yesterday morning, and then it vanished…let’s try this again!!

The sun was shining this morning when I drove to the train/rode the train into work and I’m in such a good mood!  Apparently I needed a little vitamin D 😉  Cannot wait to get out in the sun at lunch for a run!!

Rewinding…breakfast yesterday was a Yoplait yogurt, a croissant and a vente non-fat Caramel Macchiato from Starbucks.

I didn’t get a picture of lunch since I was a little worker bee – but my afternoon snack consisted of this cute little pack of pistachios + some unpictured dried fruit (a mix of apples, apricots, strawberries, rhubarb and some other fruit I’m forgetting).

I managed to get out of here around 6 last night, and made it home right before the furniture crew got there – I snacked on this little fella to hold me over til dinner.

I cooked dinner for “tonight” while the crew was unloading our furniture and it smelled so good we ended up eating it last night (with tons of leftovers for tonight/tomorrow).  I boiled some “sea shell” pasta, browned 1/2 pound of turkey (with onion powder, garlic powder and Italian seasoning) and then mixed them all together with a jar of pasta sauce.  Topped with tons of mozzarella and baked at 425 for about 25 minutes.  Here is my giant portion (we didn’t eat til almost 9, so I was HUNGRY!!)

On the side I had a salad with mixed greens, cherry tomatoes, kalamata olives and Newman’s Own Creamy Ceasar dressing.  We also split part of this bowl of pineapple.

For dessert?  A wee slice of triple chocolate cheesecake.

And then we fell into our comfy new bed and watched some ice dancing.  Which I’m not 100% sure I like, but I couldn’t turn it off anyway 🙂

This morning, I made a bagel sandwich with a Thomas’ bagel thin, 1 egg + 1 egg white, a slice of muenster cheese, and ketchup + Tapatio (the best $0.99 hot sauce around, hehe).

I also broke out my french press and made some homemade coffee, I’ve been relying way too much on Starbucks/Ink! this busy season.

I like the flavor of this International Delight’s creamer, but it is REALLY sweet, tomorrow I’ll use about 1/2 as much as I did today and add milk for extra creaminess.

Now I’m munching on a peach Yoplait and waiting for the final changes to come through for the project I’m working on…they were supposed to come Friday, then yesterday….so, maybe today?  Maybe?  I hope you all have a great Tuesday!  I’m hoping to post a new giveaway tonight/tomorrow morning, so check back!

 

Monday, check! January 25, 2010

And just like that Monday’s over…come on weekend 😉

Today was a good day on the whole.  I’m switching back to working 8-5 (ok, the 5 part is really more like 5:30, 6 or 7…but I can say 5 and it sounds good) and that extra hour of time before I needed to leave for the train was AWESOME.  I got up at 5:50 and showered, took my time drying/straightening my hair, picked out a cute outfit (short-sleeved black turtle neck, gray slacks) and ate a french toast bagel with whipped cream cheese.  The bagel is Target brand from the refridgerated section and was GOOD.  It was crispy on the outside but super chewy in the middle.  Mmm!!  I did miss the photo op, so I owe you one tomorrow 😀

I had a banana and a bag of these Smart Food popcorn thingies around 10:

Verdict?  um, not good.  I was expecting something like caramel corn- salty + sweet, and cookie bits thrown in.  And instead, it was just really, really sweet and stuck in my teeth.  And the cookie bits didn’t really taste like cookie, just like sugar.  Blech.  😦  On the plus side – these do have 2 grams of fiber in a little baggie, plus vitamins and minerals.  But, I refuse to eat anymore just because they tasted so bad…no offense if these are your favorite snack…

I went for a run *gasp* at 11 and knocked out 3.79 miles in about 41 minutes with 1,130 feet elevation gain and 1,130 feet loss (for a net change of 0 feet, hehe).  It was super windy out, but it felt SO good to be running again after 2 weeks off.

I was ravenous when I got back but I like to cool off at my desk for a little while before heading to the kitchen to get my lunch…I don’t want to run into the VP of our department all sweaty and nasty like.  So, I snacked on this handful of cherry tomatoes while my face turned back to normal, people color (instead of tomato red – hehehe, get it? :P)

Lunch was a cup of Campbell’s soup at hand. I love this chicken noodle flavor, no, it’s not the healthiest chicken noodle…but it’s comfort food in less than 90 seconds!

To go with my soup I had a cheese sandwich made with 2 slices Pepperidge Farm double fiber bread, a slice of Muenster and a slice of Provolone.  The picture seems to have disappeared…

I also had kumquats and a little container of mandarin oranges to round out my lunch.

Do you like kumquats?  I do, but I can only eat so many before my mouth starts to feel strange.  I love the slightly bitter skin against the sour center.  Yum!!

I also snacked on some unpictured orange wedges  before coming home.  Chris made a really yummy dinner of scrambled eggs, cinnamon rolls (the kind from the roll out can) and little turkey sausages.  I wasn’t able to get to my camera as my mother-in-law was scrubbing the tile…darn it!

Now I’m getting ready to see what’s new on Hulu and then get ready for bed 🙂  Tomorrow’s grand plan is wake up at 5 – do a yoga workout of some sort, do the Ab workout I’m in love with and get ready for work – and try to get in another 3-4 miles at lunch tomorrow.  Wish me luck!!  I hope you all have a great Monday night and that your Tuesday starts off fantastic!

 

Lasagna, take 1 January 4, 2010

I say “take 1” because I have a feeling we’ll be eating a LOT of leftover lasagna this week 🙂

Rewinding to this morning I was running really late after throwing together the Crockpot Lasagna (and sleeping in, whoops) and barely made my train.  I grabbed a Perfect Oatmeal with brown sugar and a grande non-fat raspberry latte at Starbucks with a gift card I received this weekend.  I added some craisins, raisins, and Honey Bunches of Oats – Just Bunches that I had in my desk to the oatmeal.

I also ate a Kraft Natural String Cheese that I brought from home.

Work was interesting today…but productive!  I got all but 2 things checked off my to-do list, wahoo!!  I was very strict with myself and really forced myself to stay on-task as much as possible.  I did receive some sad news about a member of my running group today, she delivered her first baby at 27 weeks this Sunday and there are a few complications with the baby.  The baby is currently in NICU and the family would truly appreciate any thoughts and prayers you can send to baby Rachel.

For lunch I made leftover red beans and rice + mashed potatoes:

I also mixed in this bag of broccoli – shredded into bits.

The verdict?  Leftover red beans, rice, and potatoes – thumbs up.  Adding  broccoli…not so much.  The texture wasn’t bad but the flavor of the broccoli just did not mesh with the rest of the bowl. Bleh!  At least I got in some greens 😉

Near the end of the bowl I mixed in my piece of corn bread from home…saved the day!

Later in the afternoon I snacked on 4 sticks of celery chopped up into smaller sticks and a packet of Justin’s maple almond butter.  Yum!!  I was just missing the “ants” (raisins) and I could have had “ants on a log!”

I also had a cup of Strawberry Stonyfield yogurt with probiotics.  This had an interesting texture…kind of a mix between yogurt and pudding, but it had a nice flavor!

Just before heading home I had a twin pack of Starbursts (red and pink, score!!) and a mini-cookies and creme Hershey’s bar.

The light rail ride home was quite boring this evening, I forgot a book…thank goodness I had my I Pod 🙂

Dinner was all ready when I got home – yay Chris and a crockpot!

This morning before work I put a crockpot bag in and then layered spaghetti sauce, no-bake lasagna noodles, ricotta cheese and mozzarella cheese.  I topped the layers with more spaghetti sauce + a little water and tons of mozzarella. This mixture cooked all day and we topped it off with more warm sauce when I got home, my only complaint about the crockpot lasagna is that it tends to dry out a little when left to cook ALL day long.  I bet if made over the weekend and cooked 4-6 hours it would be perfect!

On the side we had organic Ceasar salad from this  Earthbound Organic Farms mix and garlic bread that we made with Udi’s Sour Dough bread, butter and garlic powder 🙂

Now we’re watching the news and relaxing!  We’re meeting with our realtor on Saturday so I need to send her a list of houses we’ve found on line so we can review their detail listings.  Getting excited to start the process!  Have you bought a house?  Any tips on things we may not think to look for but are important?

Happy New Year…Almost! December 31, 2009

Just about 3.5 hours til 2010!  I’m relaxing in bed watching a Vampire Diaries repeat…I know, exciting 😉  I can’t wait for the 21st of January for new episodes!

Today was a short day, I worked 7:30 to 2:30 and had such a weird appetite!  I picked up a turkey sausage + cheddar sandwich on an Asiago bagel at Einstein’s on my way in to the office and a grande hot cocoa at Starbucks.

Around 10 I snacked on a bag of Baked Cheetos 🙂

Lunch was from the Falafel King in the building’s food court – a hummus/falafel special with a whole wheat pita.  I love the hummus at Falafel King, it’s so creamy and the hot sauce on top is just an extra little kick.

After I got home I watched an episode of Bob Ross – we’ve been watching a lot of PBS as we just have antennae cable right now 🙂 Then Chris and I went to Tokyo Joe’s for dinner.  I tried the chicken wraps instead of a rice bowl and was pleasantly surprised!  This plate had 5 pieces of Bib Lettuce, grilled chicken, 1/4 of an avocado, sliced cucumber, sliced carrot and red peppers.  There were also three dipping sauces.  One was a spicy peanut, the middle was a ginger/soy dressing and I couldn’t quite place the third…it was kind of…like pesto?  All together- pretty yummy!

I just snacked on some Pepperidge Farm caramel chunk cookies and a glass of milk with Benefiber and Chris and I played a game of Uno, a game of checkers and 2 games of Yatzee.  He won all 4 games!!  I seriously cannot win a board game against him, obviously he’s cheating 😉
